Cottage Cheesecake Cups

These are a delicious snack or dessert and have great macro ratios! I love hiding protein in my desserts - such a great way to get extra protein throughout the day. You can make these with protein powder (like I did) or leave that out for a little less protein content.

Ingredients:

1 16oz package non-fat cottage cheese* (I like Good Culture brand, the pasture-raised version)
1/4 cup milk of choice (I used my coffee creamer, NutPods)
2 tsp vanilla extract
2 scoops protein powder (I used unflavored beef isolate protein from Be Well By Kelly)
4 small scoops powdered stevia extract
2 tbsp maple syrup
1 cup blueberries

Optional:
Lemon or orange juice and/or zest. If using zest, don’t add it before you blend - add it after or it will make it bitter

*I used non-fat cottage cheese in this recipe, which is what the nutrition facts are based on. The reason I used non-fat is because I am focusing on very specific macros for my fitness goals (maintaining skeletal muscle, and losing body fat). If you are trying to maintain your weight or you are not concerned about calories, go ahead and use whole milk cottage cheese as it is creamier and more delicious!

Substitutions:
Sweetener:
-You can use 1/4 cup maple syrup instead of stevia
-You can replace the stevia with monkfruit
-You can use whatever sweetener works for you - just taste as you go
Protein powder:
-You can use a vanilla protein powder that is sweetened, but you’ll want to adjust the sweetener ratios in that case.
-You can leave out the protein powder, but your cups will have less protein
Fruit:
-Use any fruit you want to top this off!

Method:

  1. Place the cottage cheese, nutmilk, vanilla, protein powder, stevia, and maple syrup (+ optional lemon or orange juice) into a high performance blender like a Vitamix OR use a food processor. (A regular blender might not get the smooth consistency you want.)

  2. Blend on high until smooth.

  3. If adding lemon or orange zest, add in after blended and stir with a spoon.

  4. Pour into four containers and top with the blueberries or fruit of your choice.

  5. Let sit overnight in the fridge. You can enjoy right away, and the texture will be a little looser if you do!
