Instant Pot Steel Cut Oats

I’ve been making a lot of steel cut oats lately because it is an easy breakfast with good nutrients. When I learned I could make them in bulk in the Instant Pot, I was really excited! This was super easy and the results were great.

Makes: 6-8 Servings

Ingredients:

2 cups steel cut oats (I like the sprouted One Degree brand)
5 cups water
1/2 cup flax meal
2 tsp cinnamon
1 tsp salt
2-4 scoops vanilla protein powder (I like Be Well By Kelly)
1 cup berries or chopped apples
1/2 cup chia seeds

Other optional toppings:

Nuts
Seeds
Coconut
Dried fruit

Note: If you’re using berries, add after cooking. If using apples, add before cooking.

Method:

  1. Place the oats, water, flax meal, cinnamon, salt, and protein powder in the bowl of an Instant Pot. Whisk together until well combined. Add in the apples if you’re using them (if using berries, wait until after cooking). Put on the lid in the sealed position and pressure cook on high for 4 minutes.

  2. Let it naturally release for 15 minutes, then turn off the pot and release the pressure valve.

  3. It will be a little watery when you open the lid - that’s okay. Add the chia seeds and berries, if using.

  4. Store in 6-8 containers. Refridgerate.

  5. When ready to eat, empty into a bowl, reheat, and add milk of your choice.
