Grain-Free Keto Granola

I love having this granola stocked up in the pantry. I like to eat it with some coconut milk or dairy-free yogurt, plus a handful of berries. This is a great replacement for cereals made from refined carbohydrates and sugars and kids love it!

Ingredients:

4 cups nuts (I like cashews, walnuts, almonds & pecans)

2 cups seeds (I like to do 1 cup pumpkin seeds, 1/2 cup sunflower seeds, 1/2 cup mix of small seeds like chia, sesame, hemp and flax seeds)

1 cup coconut flakes

1/4 cup coconut oil

1/4 cup maple syrup or keto maple syrup

1 tsp vanilla

2 tsp cinnamon

1/2 tsp ginger

1/4 tsp nutmeg

1/4 tsp cardamom

1/2 tsp salt

Method:

  1. Mix together all the dry ingredients in a large bowl.

  2. Melt the coconut oil, and mix together with maple syrup, vanilla, and spices.

  3. Stir the wet and dry ingredients until well coated.

  4. Bake at 350 for 25-30 minutes, stirring every 10 minutes.

  5. Let cool, then store in a tupperware in a cool, dry place.
