Grain-Free Keto Granola
Ingredients:
4 cups nuts (I like cashews, walnuts, almonds & pecans)
2 cups seeds (I like to do 1 cup pumpkin seeds, 1/2 cup sunflower seeds, 1/2 cup mix of small seeds like chia, sesame, hemp and flax seeds)
1 cup coconut flakes
1/4 cup coconut oil
1/4 cup maple syrup or keto maple syrup
1 tsp vanilla
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1/4 tsp cardamom
1/2 tsp salt
Method:
Mix together all the dry ingredients in a large bowl.
Melt the coconut oil, and mix together with maple syrup, vanilla, and spices.
Stir the wet and dry ingredients until well coated.
Bake at 350 for 25-30 minutes, stirring every 10 minutes.
Let cool, then store in a tupperware in a cool, dry place.
