Paleo Nachos

This is a quick and easy meal that is one of my go-tos when I’m focusing on a cleaner diet. Great news is - because you can deconstruct these, kids can also enjoy them. Have your kids go around and choose which toppings they’d like to have with their chips. Even if they say no to the topping, it counts as an “exposure” for them, diversifying their palette!

Makes: 4-5 servings

Ingredients:

Spice mix:
1 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1 tsp dried oregano
2 tsp salt
1 tsp black pepper

Taco meat:
Avocado oil (for cooking)
2lbs pasture-raised ground beef (grass fed and finished okay)
1 yellow onion, chopped
2 cloves garlic, minced

Nacho fixings:
Grain free chips such as Siete cassava chips or Banana brand plantain chips
Primal Kitchen queso (or make your own)
2 whole tomatoes, deseeded and diced
3 avocados, chopped
2 jalapenos, finely diced (optional)
1/2 red onion, finely diced
2 tbsp chopped cilantro
Limes
Chopped lettuce

Method:

  1. Combine the spice mix in a small bowl and set aside.

  2. Pre-heat a large pan over medium heat. Using avocado oil, sauté the onions until they are soft and translucent. Add in the garlic and saute for another minute, until fragrant.

  3. Add in the beef, and break it up with your spoon while you brown it in the pan. Once the beef is browned, mix the spice mix with 1/2 cup of water and add to the pan. Cook until the water has evaporated and the beef is well cooked. Taste and season.

  4. Heat up the queso in a sauce pan until warmed through.

  5. Now you just need to fix up your nachos! I like to put all the fixings in a bowl and dip my chips into them. You can also crunch up the chips and put them on top and eat with a spoon or fork.

  6. Optional: combine the tomatoes, onion, jalapeños, avocados, cilantro, a pinch of salt, and squeeze of a lime together into a pico de gallo mix.

    NOTE: If you’re making for kids, keep all the ingredients in separate bowls and go around asking them if they would like each ingredient. Remain neutral and let them pick! Even if they don’t pick an ingredient you’d’ like them to try, getting exposed to the ingredient makes it more likely for them to try it in the future.
